How to Choose Fresh Vegetables: A Simple Guide

You do not need to be an expert to spot good produce. A few quick checks of colour, firmness and weight will tell you most of what you need to know.

The three basic checks

  • Colour: bright and even colour is usually a good sign.
  • Firmness: most vegetables should feel firm, not soft or wrinkled.
  • Weight: a vegetable that feels heavy for its size usually holds more moisture.

Vegetable by vegetable

Tomato: smooth, firm skin with a gentle give. Avoid cracks and dark spots.

Brinjal: shiny skin and a fresh green stem. A dull skin often means an older brinjal.

Lady finger: small to medium pods with a clean snap at the tip. Large pods can be fibrous.

Bottle and ridge gourd: firm and heavy, with skin free of soft patches.

Onion: dry, papery skin with no sprouts or soft spots.

Potato: firm, with no green patches or sprouts.

Leafy greens: perky leaves with no yellowing or sliminess.
